Apple and Honey Cake

Apples and honey are eaten together on Rosh Hashanah because they symbolize the hope for a sweet year to come.

Honey cake is traditionally enjoyed on Rosh Hashanah, but this apple and honey cake is a fun spin on the classic and twice as symbolic because it uses both apples and honey!

I love how simple this cake is to make, too. The batter comes together without much fuss, and once it goes into the oven, the apples and honey make the whole kitchen smell like Rosh Hashanah.

It's a great cake to serve for dessert with tea or as a sweet ending to your Rosh Hashanah meal, but it's also perfect to enjoy the next morning with coffee after Kiddush.

how to store

Let the bread cool fully.

Transfer the bread to an airtight container lined with a paper towel.  Place another paper towel on top of the bread before sealing. 

If using a zip-top plastic bag, line both sides of the bag with paper towels and remove as much air as possible before sealing the top of the bag. 

Store at room temperature for up to 4 days.

how to freeze

Let the bread cool fully.  Wrap in plastic wrap, then place in a resealable freezer bag.

Freeze for up to 3 months.  They will still be safe to eat after 2 to 3 months, but their quality begins to degrade. 

When ready to eat, let thaw at room temperature. To give it a fresh-out-of-the-oven taste and texture, rewarm gently in an oven.

Ingredients

  • 3 cups all purpose flour
  • ½ cup white sugar
  • ¼ cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • ¾ teaspoon salt
  • Pinch ground cloves
  • 3 large eggs
  • ¾ cup honey
  • 1 ¼ cups oil
  • 1 ½ teaspoons vanilla
  • 4 Granny Smith apples (peeled, cored, and shredded or pureed)

Instructions

  1. In a large mixing bowl, whisk together flour, sugar, brown sugar, baking powder, baking soda, cinnamon, salt, and cloves.
  2. Add eggs, honey, oil, and vanilla. Mix together until a smooth batter forms.
  3. Fold in apple shred or mix in the apple puree.
  4. Preheat oven to 325°F or 160°C. Pour the batter into a greased 9×5-inch loaf pan.
  5. Bake in a pre-heated to 350°F for 40 minutes or until a toothpick stuck in the middle of the loaf comes out clean.
