How to Substitute Chocolate With Cocoa Powder in Recipes

I've tried every recommended conversion I came across.

I was sure the one from Hershey's would be good, but it turned the brownies I was making into a chocolate cake.

This combination is the only one that I found which worked.

But only when it was mixed together first before adding it to the recipe.

When I tried to just add more cocoa and more oil to the brownie recipe I was working with they didn't come out the way they did with melted chocolate. At least not until my brother tested making it as a paste first, and then it worked.

However, since we had tested sweet baking chocolate for the brownies, now the brownies weren't as sweet as when we used the melted chocolate.

No one really factors in that different types of baking chocolate need different levels of sweetness.

So, I went and figured out how much sugar would be needed for each type of chocolate.

Recipe Tip

Make sure to combine them before adding them to whatever recipe you're using.

If you don't the recipe won't come out right.

Substitute For Chocolate in Baking

Ingredients

To replace 4 ounces of sweet baking chocolate

  • ¼ cup unsweetened cocoa powder
  • ⅓ cup sugar
  • 3 tablespoons oil

To replace 4 ounces of semisweet and bittersweet chocolate

  • ¼ cup unsweetened cocoa powder
  • 2 ½ tablespoons sugar
  • 3 tablespoons oil

To replace 4 ounces of unsweetened chocolate

  • ¼ cup unsweetened cocoa powder
  • 3 tablespoons oil

Instructions

    1. Mix cocoa powder, sugar, and oil together in a bowl until you have a smooth paste. If you're placing unsweetened chocolate, skip the sugar.
