Rice Krispies Treats were invented in 1939 by two women at Kellogg as a fund raiser for Camp Fire Girls.

However, the first time I ever had Dairy Free Rice Krispie Treats was when a neighbor brought a tray over after one of my little brothers were born.

I have five younger brothers, and if it was the brother I think it was, I was 12 at the time.

Mostly, what I remember was coming back to the tray over and over because I liked this new thing so much.

Seeing that we liked it, my Mom started making them too.

Now that I make them, however, I’m sure both my mom’s recipe and the neighbor’s recipe use margarine and I use oil.

Why use Marshmallow Fluff

While many recipes call for marshmallows, my mom always used marshmallow fluff growing up.

When I asked her why she chooses marshmallow fluff over marshmallows, my mom’s response was “because I’m lazy.”

This would sound funny to anyone who knows her, because she is the hardest working person I’ve ever met.

However, when it comes to cooking, she really is lazy because she never enjoyed doing it and was too busy to fuss around.

Marshmallow fluff melts easier and more quickly and is easier to stir and spread into a pan.

About Dairy Free Rice Krispie Treats

Rice krispie treats are not usually dairy free because they are generally made with butter.

To make rice krispie treats without butter, you need to replace the butter with vegan butter, kosher margarine, or oil.

This recipe opts for replacing the butter with oil.

What Kind of Oil to Use for Dairy Free Rice Krispie Treats

I use a neutral oil like canola oil or safflower oil. However, you can use coconut oil if you want.

Storing Rice Krispies Treats

Allow to cool completely. Place them in an airtight container or an airtight bag. Store at room temperature.

Freezing Rice Krispie Treats

When completely cool, place rice krispie treats in a resealable freezer bag and freeze for up to 6 weeks. After that, the treats are still safe to eat but the quality begins to degrade.

You can store the whole batch or cut them up and wrap them individually, so you can take pieces as desired.

These dairy free rice krispie treats are made without butter and are a great dairy free dessert.

Ingredients

  • 3 tablespoons oil
  • 7 ounces marshmallow fluff
  • 1 teaspoon vanilla extract
  • 6 cups rice krispies cereal

Instructions

  1. Heat the oil on medium in a large saucepan.
  2. Spoon the marshmallow fluff into the pan. Stir until the fluff and oil are combined.
  3. Remove from heat and stir in the vanilla.
  4. Pour the marshmallow mixture over the cereal and toss to coat.
  5. Pour mixture into 9-inch square baking pan lined with parchment paper.
  6. Press GENTLY with your fingertips, just until completely spread out (the harder you pack them in, the harder they are to eat).
  7. Allow to set, about 1 hour and cut into 9 bars.

Any specific type of oil?

You can use any kind of oil but I'd stick to natural flavored oils unless you don't mind your rice krispie treats having a hint of coconut flavor
